Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
Spread the almonds evenly onto the prepared baking sheet. Bake in the preheated oven for about 10 minutes, stirring halfway through to avoid burning.
In a large mixing bowl, combine the oats, walnuts, sunflower seeds, and spices. Mix well to evenly distribute the ingredients.
Take 6 dates and gently remove the pits. Once the pits are removed, place the dates into a food processor. Pulse the dates in the food processor for about 10 seconds, or until they are finely chopped and form a slightly sticky consistency.
Next, combine the finely chopped dates with your prepared granola mixture. To prevent sticking, consider wearing plastic gloves while handling the ingredients. Gently use your hands to fold the date pieces into the granola, ensuring an even distribution.
Carefully transfer the toasted almonds into a food processor. Make sure they are not too hot. Process the almonds on a medium-high setting for several minutes until they break down into a smooth and luscious butter consistency. Pause and scrape down the sides of the bowl as needed to ensure even blending.
Now, using your gloved hands, gradually fold the almond butter into the granola, making sure each cluster is coated. Your hands will help ensure every granola is infused with almond butter.
Spread the granola mixture evenly onto the prepared baking sheet. Press it down slightly to encourage clumping.
Bake in the oven for about 18-20 minutes, stirring halfway through, until the granola is golden brown and crispy.
Once the granola is done baking, remove it from the oven and let it cool completely on the baking sheet. This will allow it to crisp up further.
Once completely cooled, transfer the granola to an airtight container for storage. It can be stored for up to two weeks.
